This morning I was woken up by my puppy at 5:30am! Not very happy luckily around 6:30 she let me go back to sleep. I got up at 9:30 and decided to make a green smoothie before my workout.

Smoothie Saturday!

Happy Saturday! Today I started the day with breakfast with one of my best friends. It was the perfect way to start off the weekend! We met for breakfast in Delray on Atlantic ave and ate at the Green Owl. Her & Debora introduced me to this place & I am obsessed! We shared a spinach & tomato omelet and blueberry pancakes. I was too busy talking I forgot to take a picture! It was so good! After breakfast we walked along atlantic ave and stopped in some of the shops. Another one of our favorite places is The nutrition cottage. It is a health food store and juice bar that serves smoothies & fresh juices to order. If you live in south florida near delray definitely give the nutrition cottage a try! They sell all health food snacks, organic lotions, shampoos & cleaning products. It was so hot outside we decided to have a smoothie.

I ordered the Berried Treasure it has raspberries, strawberries, blueberries, apple juice & kale it was delicious! Renata ordered the Hawaiian Sunset it has mangos, bananas, papaya nectar, dates, pineapple & coconut juice. So refreshing! We then sat & talked some more while drinking our smoothies! It was a perfect morning. Spending time with friends is the best way to unwind & de stress after a long work week. It’s much needed to keep my sanity! Especially doing healthy things together it’s great for your body, mind & soul! So make sure to take time out for yourself & spend time with your friends!

Last Night’s Dinner Balsamic Grilled Pork Chops!

Last night for dinner we grilled pork chops with zucchini, squash & asparagus with a side of brown rice pilaf. Summer is coming right around the corner it’s the perfect time to break out the grill! I love grilling especially vegetables you can marinate them in just about everything then throw them right on the grill & dinner is ready! We haven’t had pork chops in so long when we were walking around Fresh Market I spotted them we marinated them in balsamic italian dressing for about 4 hours they came out amazing! Fresh Market is a great place to go shopping for last minute dinner ideas. This dinner for 2 was under $20 they have so many great options. It is perfect for those nights where you don’t feel like cooking but still want to be healthy.

Rice pilaf is easy to make saute 1/4 onion with some olive oil then add water & cook the rice according to the directions on the package. You can also add red or green peppers if you like do the same just saute them with the onions. Tonight I’ll be making sauteed eggplant over spinach keep checking in for the recipe!

Tuesday’s Walk/Run Workout!

I can’t say it enough that Self magazine is our absolute favorite magazine! I steal workouts from this magazine all the time! I do like working out especially the feel after but following a workout on a treadmill definitely makes the time go by faster which is even better. Lately the weather has been rainy so my workouts have been indoors but I definitely prefer running outdoors it’s such a great mood booster! Having different cardio workouts to follow while on the treadmill keeps it different & fun while I’m waiting for the weather to be sunny again so I can run outside again. This workout was from the march issue of self magazine it’s a walk/run cardio routine that’s 30minutes. It’s the perfect balance of running & walking , you burn even more calories with workouts like this because of the intervals. You burn more calories during the intense parts of the routine than if you stayed the same pace the entire routine. Routines like this are easier on the treadmill are easier because you can adjust the speed, running outdoors and doing intervals I usually rely on my playlist to push through the intense parts. Do whatever you have to do to get through! Definitely take a look at this cardio routine I guarantee you will love it!

New Dinner Idea! Turkey Meatballs & Sauteed Spinach!

Instead of having pasta with meatballs try it with a vegetable. I usually make some sautéed spinach with garlic & oil. But anything can go sautéed broccoli is another one of my favorites with meatballs. Since most people try not to eat so much pasta a great substitute is vegetables. Turkey meatballs are better for you than beef or pork so having some vegetables instead of pasta make the meal even healthier! This dinner idea is so easy all you do is make the meatballs in the pot of sauce and then sauté spinach on the side & you are all ready to serve!

IMG_3368

Turkey Meatballs & Sautéed Spinach

2 cans puree tomatoes

1/4 onion

1 package of ground turkey

1 eggs

bread crumbs

1 bag baby spinach

4 garlic gloves

olive oil

Saute the onion with olive oil add the two cans of tomato puree let simmer then add the meatballs let cook till meatballs are done about an hour.

Put the Turkey egg & breadcrumbs in a bowl and mix together till smooth using the amount of breadcrumbs you like to get the perfect consistency. Then form the meatballs in the size you prefer. Then add to the sauce.

Slice the garlic thin and saute with the olive oil till golden brown then add the spinach let cook till soft then remove from heat.

Once your meatballs are done serve with the spinach and you are all set!
